Abstract:
Products of vinification were under evaluation as potential sources of antioxidant phytochemical content based on their increased antioxidant activity and phenol. Antocianele can be used as drug preparations as well as natural colors harmless to health, etc. The thesis studied the extraction process antocianelor peel grapes ,,Merlot,, depending on the mass ratio raw material: solvent; temperature; the extraction process, the concentration of alcohol used and the type of extraction method. The results indicate that grape peel tomatoes are rich in antioxidant polyphenols sources therefore their exploitation value products as a source of antioxidant and anticancer can be profitable and therefore deserves a deeper investigation.
